Greek Lemon Chicken With Potatoes Recipe

Savory chicken with oregano cooks in a flavorful lemon oli marinade alongside tender roasted potatoes.  A perfect dish to prepare for a Sunday night dinner that the whole family will enjoy.

Ingredients

  • 1 (3-4 pound) whole chicken, cut into pieces

  • 1/2 cup olive oil

  • 2 tablespoons canola or corn oil

  • Juice of 2 lemons

  • 2-3 tablespoons dried Greek oregano

  • 1 tablespoon garlic powder

  • 3 tablespoons Worcestershire sauce

  • salt and pepper to taste

  • 5-6 potatoes, peeled and cut into wedges

  • Paprika to sprinkle over potatoes

  • 1/2 cup water

How to Make Roasted Chicken & Potatoes

  1. Preheat oven to 350 degrees.

  2. In a medium bowl, whisk oils, lemon juice, oregano, garlic powder and Worcestershire sauce.

  3. Dip each piece of chicken into mixture, coating well. Transfer into a large roasting pan, season chicken with salt and pepper.

  4. Toss potatoes in remaining oil mixture; add to roasting pan around chicken.

  5. Season potatoes with salt, pepper and paprika, to taste. Add TA cup water to the bottom of the pan.

  6. Bake uncovered 60-70 minutes or until chicken and potatoes are done.

  7. Baste chicken and potatoes several times during the roasting process. Broil last 5 minutes to crisp chicken and potatoes.
